Authentic Neapolitan fried pizza, light and tasty

1947 Pizza Fritta is to Forcella what Forcella is to Naples
It stands for the true, genuine soul of the city, the one only Neapolitans can really define.
Set between the historic Trianon theatre and the legendary Michele Condurro, Vincenzo Durante’s pizzeria was born with a very precise mission that has never changed over the years: devoting body and soul to fried pizza, mastering the dough, the rising, the frying, balancing the ingredients, playing with traditional recipes. In short, creating and evolving, but always and only starting from her: Neapolitan fried pizza.
The pizza
“As I always say: oil is not a condiment, it is a conductor”
Enzo’s fried pizzas are indulgent yet light, thanks to a dough risen for up to 24 hours and above all well hydrated: that is the secret. Water ‘repels’ oil, so a nice moist dough won’t absorb too much oil during frying, making the ‘golden one’ highly digestible.
